Audio in the movie seems fine to me.
5.1 is first track, stereo is second track, commentary is third.

Hey I’m having some playback issues. The timing for the subs were off and the audio kept cutting out for season 1. Checked a few other episodes same thing. I was using mpv. I downloaded MPC and the timing for the subs was fixed but the audio kept cutting out. What media player do you recommend? I really want to watch these files.

I never had that issue, for whatever reason, and I watched the entirety of this release.
I used MPV.

It seems you used opus 128 for both the stereo and the surround tracks. This means that the surround tracks are very obviously not transparent, as the channels have to fight over the same now-starved bitrate. It would be a very good idea to use a bitrate proportional to the number of channel pairs - a common suggestion is to use something like opus-192 for stereo and opus-384 for 5.1 surround. If I have time this weekend, I will share my own re-encoded audio tracks to correspond with your Thunderbolt Fantasy releases.
